  • 1/2 cup butter, room temperature
  • 1/4 cup canola or vegetable oil
  • 1 cup dark brown sugar
  • 3 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 teaspoon salt
  • 3/4 cup sour cream
  • 1 large or 2 medium apples, cut into 1cm cubes

For the brown sugar swirl (optional)

  • 1/3 cup pecans
  • 1/4 cup brown sugar
  • 1/2 cup all purpose flour
  • 1/2 teaspoon cinnamon
  • dash nutmeg
  • 1/4 cup maple syrup
  • 2 tablespoons salted butter, cold and cut into small cubes

For the maple icing

  • 1/2 cup powdered sugar
  • 2 teaspoons maple syrup
  • 1-2 teaspoons heavy cream
