- 1/4 cup unsalted butter, at room temperature
- 1/2 cup natural peanut butter
- 3/4 cup packed light brown sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 3/4 cup graham cracker crumbs
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 2/3 cup chocolate (we used chopped up Hershey's bars, but any chocolate will work!)
- 2/3 cup mini marshmallows
Instructions
- Preheat the oven to 350°F and line an 8 x 8-inch square pan with parchment paper on all sides. Set aside.
- In a stand mixer fitted with the paddle attachment, combine the butter and peanut butter and beat on medium speed until homogenous. Don’t over mix.
- Add the brown sugar and mix well. Use a rubber spatula to scrape down the bowl and add the egg and vanilla extract. Mix until combined.
- Scrape down the bowl and add the flour, graham cracker crumbs, baking soda, and salt. Mix until combined and no streaks of flour remain.
- Add the marshmallows and chocolate pieces and fold to distribute throughout the batter. Transfer the batter to the prepared baking pan and pat into an even layer.
- Bake until set on the edges and a knife inserted into the middle comes out mostly clean, 25 to 30 minutes. Allow to cool before slicing into 16 pieces. Enjoy!
