for the peanut butter and honey granola

  • 1/4 cup coconut oil
  • 1/3 cup honey roasted peanut butter
  • 2 teaspoons pure vanilla extract
  • 1/4 cup honey
  • 3/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3 cups old fashioned oats
  • 2 tablespoons chia seeds
  • 1/2 cup almonds, roughly chopped
  • 1/2 cup whole wheat pastry flour (optional)
  • 2 tablespoons almond milk (optional)

for the parfaits (makes 2)

  • 2 cups plain, non-fat greek yogurt
  • 2 tablespoons peanut butter (my fave is the honey roasted from Whole Foods)
  • 2 tablespoons jam
  • 1 cup peanut butter & honey granola, from above
