  • 1/2 cup vegetable oil
  • 1 1/4 cups brown sugar*
  • 1/3 cup molasses
  • 4 large eggs, room temperature
  • 2 tablespoons vanilla extract
  • 2 2/3 cup all-purpose flour
  • 1 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 cup buttermilk

for the white chocolate buttercream

  • 12 ounces white chocolate, finely chopped
  • 1 1/2 cups unsalted butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt

  1. I prefer to use dark brown sugar because it gives the cake a deeper flavor, but light brown sugar works just as well!
