  • 2 eggs, room temperature
  • 2 cups buttermilk
  • 3 Tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 cups all purpose flour
  • 3 Tablespoons granulated sugar
  • 1 cup fresh or frozen blueberries

Notes

  1. Whatever you do, do NOT over mix your batter. Over mixing will produce tough, dry pancakes. The batter should be a little lumpy with streaks of flour!
  2. Your first pancake will probably look a little off! Don’t worry–we always toss the 1st pancake (or eat it while we cook hehe), knowing that the rest of them will look picture perfect!
  3. Pay close attention to the heat on the pancake griddle. If your pan gets too hot, remove it from the heat to cool down, wipe off any burnt butter and wait to make more pancakes to prevent burning!
