Champagne Jello Shots
Is there any better way to ring in the new year than with champagne jello shots? Absolutely not. These boozy jello shots are made with bubbly champagne to make the perfect festive NYE treat!

Ingredients

- 3 cups champagne (or sparkling wine)
- 1/2 cup granulated sugar
- 1 Tablespoon lemon juice
- 4 Tablespoons (4 envelopes) unflavored gelatin
- 1 cup vodka
- sprinkles, optional
Instructions
- Line an 8 x 8 pan with plastic wrap on all sides*. Set aside.
- Combine the champagne, sugar, and lemon in a heavy bottom sauce pan over medium-low heat. Stirring with a whisk, cook until the sugar granules have completely dissolved.
- Add the gelatin and whisk. Add in vodka and whisk to combine. Do not let the mixture boil.
- Pour the mixture into your prepared pan and place in the fridge for at least 3 hours to set.
- If desired, top with sprinkles before slicing into 16 squares and serving!
Notes
- If you would rather make these jello shots in individual containers, you can also use mini condiment containers or shot glasses!
