  • 1/4 cup heavy cream
  • 4 ounces semisweet chocolate, finely chopped
  • 1 1/2 cups old fashioned oats
  • 2/3 cup cup packed light brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 5 tablespoons unsalted butter, melted
  • 1 cup corn syrup (we used dark, but any kind will work!)
  • 2 teaspoons vanilla extract
  • 2 teaspoons apple cider vinegar
  • 3 large eggs, room temperature
